FORMING OF METHODOLOGY AND TECHNIQUES OF TRADE COMPANY’S PERSONNEL MARKETING

The ways of using the tools of marketing and management in methodology and the techniques of a company’s personnel management are considered, the version of its strategic positioning is given. The mechanism of forming the personnel marketing strategy is proposed. Description of estimation of its influence on clients’ loyalty and a firm’s competitiveness is given.

STRATEGIC DIRECTIONS IN ANTI-CRISIS HUMAN RESOURCE MANAGEMENT

The article considers the concept of anti-crisis personnel management with an emphasis on creating conditions for maintaining competitive advantages of the enterprise in crisis conditions. Approaches to reengineering of organizational and management structures of anti-crisis direction are suggested.

CONDITION AND PROSPECTS OF DEVELOPMENT OF INNOVATIVE ECONOMY IN THE RUSSIAN FEDERATION 

The analysis of the key problems of the Russian economy – a very low level of innovation activity of industrial companies is conducted. Uselessness of the increase of actors involved in the innovation process, to increase the perception by enterprises of innovative technology without the incentive of implementing the invention is explored.

FOOD BASKET FOR HEALTHY FOOD IN THE CONDITIONS OF THE MEGALOPOLIS

The article provides a comparative analysis of the minimum consumption of food for healthy nutrition in kind and in value terms in Moscow and St. Petersburg in 2016–2017. In megacities, its cost is higher by 20 % in Moscow and by 6…8.7 % – in St. Petersburg. Dairy products and fresh fruits and vegetables account for a major share of the food basket.

Taking into account the peculiarities of the organization of management tours, a management-tour program was developed in the agricultural sector of the Belgorod region, which is able to motivate participants to take active steps to improve management systems in their companies, and to promote the level of domestic professionalism in the production of meat products.

DETECTION OF FALSIFICATION OF TEXTILE MATERIALS FROM VALUABLE FLEECE TYPES ON THE RUSSIAN MARKET

The review of information on cases of identification of falsification of articles from valuable wool types, existing standard methods for quantifying the fibrous composition of woolen textile materials and products, as well as the development of methods for identification of fine animal hair used as valuable raw materials for the textile industry is presented. Results of research of products from textile materials containing valuable types of wool, testifying to falsification of wool on the Russian market, are given.

CHANGES IN β-FRUCTOFURANOSIDASE IN APPLES DURING STORAGE DEPENDING ON THE APPLIED POLYMER COATING

The article considers the possibility of using film-forming compositions based on polyvinyl alcohol to create a modified gas medium inside the fruits of Apple varieties Jonathan and Renet Simirenko. It is shown that the method of storage had a significant effect on the activity of β-fructofuranosidase, which is responsible for hydrolysis of sugars, and also controls the biosynthesis of starch. And by reducing the activity of invertase under the influence of coatings, has helped to keep sugar in greater quantities.

VEGETABLE RAW MATERIALS IN FORMATION OF ANTIOXIDANT PROPERTIES OF JUICE DRINKS

The article discusses the antioxidant capacity of juice-containing drinks - berries drinks. The antioxidant capacity was determinated by the FRAP (ferric reducing antioxidant power) method. Antioxidant capacity of juice-containing drinks depends on the type of berries and semi-finished products, and do not depends on the content of vitamin C. Antioxidant activity of berries drinks decreases when they are stored with an open package.

THE ANALYSIS OF FEATURES OF MODERN SYSTEMS OF TRAINING OF PERSONNEL FOR THE TOURISM INDUSTRY IN RUSSIA AND ABROAD

The article is devoted to a problem of training of personnel for the modern industry of tourism. The main questions connected with the existing system of training for the tourist industry are presented and also features of foreign modern approaches in the field of professional tourist education are analysed. Advantages and shortcomings of the existing modern systems of training of specialists of tourist branch are marked out. The conclusions about ways of improvement of the Russian system of training of personnel for the tourism industry based on the analysis of the most perspective foreign systems are drawn.

MANAGEMENT TOURS TO THE AGRICULTURAL SECTOR AS AN EFFECTIVE FORMAT FOR HOLDING CORPORATE EVENTS 

In the process of participation in proposed management rounds that consumers have the opportunity to meet with technological innovations; to learn the advanced achievements of the leading companies; to learn innovative approaches of management in the field of technology, management of the company, qualification and loyalty of employees; to meet successful entrepreneurs. These aspects are addressed at the regional level – the example of the Belgorod region. The focus in this subject is paid to creating a business climate that are generated directly by two main factors: increased demand for production of regional products and services, and the activity of business travel. For several years the region is the leader in Russia on manufacture of pork and poultry meat. As at the end of 2015 the number of pigs in the region of nearly 4 million heads (18.5% of the national amount). In the region produces a fifth of the pork and the seventh part of poultry meat in Russia. These products are in demand not only in domestic market, but also actively exported to the countries of near and far abroad. A brief tour of the advanced organisations for the production of products on the territory of Belgorod region (Group of companies "agro-Belogorye", agricultural holding "Miratorg", CJSC "prioskolye", agricultural holding "BEZRK-Belgrankorm") was conducted. These companies are successful leaders, therefore, the authors developed a program of thematic management tour in the business environment successful agricultural companies and organizations of the Belgorod region, filled with master classes from leading specialists. Management tours in the agricultural sector represent a new educational format for representatives of agribusiness. ANALYSIS AND PROSPECTS OF DEVELOPMENT OF IDENTIFICATION AND FALSIFICATION OF DAIRY PRODUCTS 

The parameters that determine the authenticity of the product for identification include several groups: sensory, instrumental, microbiological indicators. One of the most important means of identification is their marking. Identification system, designed for dairy products, includes a subsystem: "Documents", "Resources", "Technology. Equipment" and "Finished product". The concept of "identification" and "falsification" are often linked. Falsification deals with the provision of false marking. Not only milk is falsified, but also the finished product. Despite the fact that the methods of milk adulteration for the last 2-3 years has not changed, but there are new methods to identify counterfeit products. Methods Kjeldahl or Dumas for determination of total protein let to determine the naturalness of the product in protein content. Analysis of the composition of serum proteins was determined by gel permeation chromatography. Proteins which are formed only in the process of drying milk (when exposed to temperatures of 190 °C and reaching a moisture less than 40%), confirming the fact of falsification of the product with milk powder. Falsification of serum leads to the formation of large protein flakes when fermenting. Recently fatty acid composition of milk is falsified, and to identify this gas chromatographs are used. To identify some of the fatty acids gas GC-MS spectra is used. For milk receiving the spectral analysis of a solution of fat fraction in the UV range is used. The basis of this method is the specific absorption of the phospholipid of the membranes of the fat globules of milk and its absence in the case of vegetable fat. The definition of natural milk is carried out by using the method of spectral analysis. The use of innovative methods of milk falsification detection will contribute to stable development of production and tackle food security and production of high quality food.

CHANGES IN β-FRUCTOFURANOSIDASE IN APPLES DURING STORAGE DEPENDING ON THE APPLIED POLYMER COATING 

The main part of the dry substance of apples are carbs and most of them are sugar. Hydrolase β-fructofuranosidase (invertase) which refers to the number of enzymes involved in the metabolism of plant cell walls plays a key role in the metabolism of sucrose. To slow down the life processes of fresh fruits laid on storage there have been proposed various methods, but increasingly finds a way of applying individual polymer coating on the surface of the fruit. The author studies the varieties Jonathan and Renet Simirenko. In the basis of the composition must lie a film-forming drug. It needs to be approved for use in the food industry, possess water solubility or ability to form an emulsion to give when applied to the surface of a thin selective to gases film. Such are the qualities of polyvinyl alcohol (PVA). The second component is an aqueous solution of calcium chloride. Treatment with calcium salts, as well as introducing them to the film-forming compositions prevents the emergence and development of physiological diseases of apples. Sorbic acid (SA) was used as a widespread preservative drug if preservation from microbiological contamination of food. The optimal composition of film-forming polymer coatings for storage of apples was determined by the results of commodity research and analysis (quality of Apple fruit). There have been three variants of the experiment: 1 (control) – the fruit laid without treatment in standard boxes with a capacity of 25 kg; 2 – fruits treated with a composition consisting of 2.5% solution of PVA + 2% calcium chloride+ 0.2% SC; 3 – before laying on storage of the test samples of the apples was treated with a mixture of 25% paraffin high frequency, 5% wax, and 0.2% mom, the preparation before use diluted with water at a ratio of 1:5. Throughout the storage period invertase activity grade Jonathan was greater than activity varieties Renet Simirenko. In the fruits of the 1st option of both varieties the activity of invertase increased continuously throughout the storage period. The application of the polymer coatings allowed to reduce the β-fructofuranosidase activity in apples was studied varieties throughout the storage period.
